Kids know that sometimes treats just have to include "the good stuff". The official muffin of New York State, the Apple Muffin, was created by elementary school children in North Syracuse.

Topping
  • 1/2 Cup Walnuts
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Flour
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Lemon Peel, grated
  • 2 Tablespoons melted Butter

Combine ingredients and set aside.

  Muffins
 
  • 2 Cups Flour
  • 3/4 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 1 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Cloves
  • 1/8 Teaspoon Nutmeg
  • 2 Cups Apples, coarsely chopped
  • 1/2 Cup Raisins
  • 1/2 Cup Walnuts
  • 3 Eggs, slightly beaten
  • 1/2 Cup Butter, melted
  • 4 Ounces Cream Cheese, cut into small pieces
  • 1/2 Teaspoon Vanilla
  Combine flour, sugar, salt, spices, baking soda, and set aside. Combine apples, raisins, walnuts, eggs, butter, cream cheese, and vanilla. Add dry ingredients, a little at a time, to the apple mixture. Stir until just combined. Do not over-mix. Portion batter into muffin papers; sprinkle with topping. Bake at 375°for 20 to 25 minutes.
Makes two dozen muffins.
Three Perfect Pumpkins
Pumpkin Chocolate Chip Muffins  
 
  • 4 Eggs
  • 2/3 Cup Sugar
  • 1 Cup Cooking Oil
  • 16 Ounce Can Solid Pumpkin
  • 2 Teaspoons Cinnamon
  • 2 Cups Flour
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 12 Ounce Chocolate Chips
  Beat until fluffy: eggs, sugar, oil, pumpkin and cinnamon. Add and mix flour, baking powder, salt and baking soda. Stir in chocolate chips. Grease pans or use baking cups. Bake at 375°for 20 minutes. Makes 1 1/2 dozen.
If you use large muffin pans, bake for 25 minutes and it makes 1 dozen.

Autumn Apple Bread

 

 
 
  • 1/4 Cup Shortening
  • 2/3 Cup Sugar
  • 2 Well Beaten Eggs
  • 2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 2 Cups Coarsely Grated Raw Apples
  • 1 Teaspoon Grated Lemon Peel
  • 2/3 Cup Chopped Nuts

 

 
  Cream shortening and sugar until light and fluffy; beat in eggs. Sift next 4 ingredients.  Add alternately with apples to egg mixture.  Stir in lemon rind and nuts.  Bake in floured, greased 9x5x3 inch loaf pan in preheated 350°F oven for approximately 40 to 50 minutes.  Cool before slicing.
