Sunny with a chance of snow at the start of 2019. This apple turnover recipe is sure to be a crowd pleaser for breakfast or dessert. Get kids cooking this winter and snacking on apples with this fun semi-homemade apple recipe. There are just a few simple ingredients that you can pick up from your local grocery store. This recipe is actually vegan if you use Wewalka puff pastry and leave out the butter and ice cream which are optional.
Preheat oven to 375 degrees and take the puff pastry out of the fridge. Oven temperatures vary. Err on the side of caution and go less degrees if you think your oven may run a bit high. You want the apples to cook before the pastry gets too golden.
Peel and Dice the apples using Charles Hurd's Apple Cutting Method. We always recommend using a variety of apples. When we made this we used a Pink Lady & Jonagold apple because that's what we had in the fridge. Any apple that is good in a pie would work. Try SnapDragon, Empire, or McIntosh.
In a bowl combine diced apples, maple syrup, cinnamon, and nutmeg. The amounts are really just a suggestion. You should make your apples to a taste that suits you and your family best. Perfect time for little hands to help shake in the ingredients, stir the apples, and perform a taste test.
Unroll the puff pastry on a cutting board and cut into 12 squares. A pizza cutter works well for this if you have one handy. The parchment that the puff pastry was rolled in can be used on your baking sheet. You can also use your own parchment paper or nonstick foil. Please note that we recommend using Wewalka puff pastry which is allergy friendly only containing wheat and vegan since it is made with palm and canola oil. You can use a different puff pastry if you are unable to find Wewalka brand.
Place a few tbsp. of apples in the center of each square. You want to pack in as much as you can, but not so much that you will not be able to close them. If you have apples left over they will make a tasty topping for tomorrow's pancakes. Optional step, put a dot of butter in the center of each apple pile. There is a lot of butter used in the making of puff pastry, but this does make the filling a bit richer.
Turn your squares into apple turnover triangles. Fold 2 opposite corners up and give them a good squeeze together. Then by focusing on the edges work from recently adjoined point to corner pinching very securely to seal in the apple filling. Some people suggesting using a fork to seal all edges once the pastry is placed on your baking sheet.
The apple turnovers will puff up, but not out. You really do not need to leave much space between them.
Bake in the center of the oven for 20 minutes check them bottoms and top. You are looking for a golden pastry. You may want to move them up or down in the oven or turn the tray around to help them bake evenly. Total bake time will probably be around 35 to 40 minutes depending on your oven.
Let cool a bit and serve warm with your favorite ice cream or just as they are. They will keep in a Tupperware on the counter for a few days but are definitely the yummiest fresh out of the oven.
