In LOVE Apple Mug Cake

Happy Valentine's Day with the snow almost totally melted away. Melt some hearts and chocolate with this decadent Apple Hug Cake, I mean Mug Cake dessert. It only takes 90 seconds in the microwave and you mix and bake in one mug.

You most likely have all the ingredients at home including some NY Apples. We are still packing our apples from the fall and delivering to a grocery store near you. We recommend using a softer baking apple like an Empire or McIntosh. This can make a yummy breakfast in bed treat for that special someone. Get kids helping in the kitchen to make some of these yummy mini apple cakes.

What you need:

A large Mug, Spoon & some Measuring Utensils

Ingredients (for 1 mug cake):

  • 1/3 cup flour

  • 2 tbsp sugar

  • 1/4 tsp baking powder

  • dash of salt

  • 2 tbsp butter - melted

  • 2 tbs Hurds Apple Sauce with no added sugar

  • 1/2 tsp vanilla

  • 1/2 an apple - minced

  • 1+ tsp mini chocolate chips

  • 1+ tsp chopped walnuts

  • whipped cream

  • caramel sauce (optional)

If you are working with multiple little kids, its better to pre-measure the ingredients. It will make a bit extra clean up, but it will be easier to keep them engaged.

  • Melt the butter and peal and mince your apples. See our how to cut an apple blog if you are looking for a new way to slice.

  • Measure and mix the dry ingredients.

  • Add the melted butter, apple sauce and vanilla and stir real well.

  • Mix in the apples, chocolate chips and walnuts

  • Microwave for 70 - 90 seconds. There should be no really wet dough on top. None of the ingredients have to be cooked, so better to air on the side of slightly underdone. Let sit for at least a minute.

  • Top with whipped cream a touch of caramel and maybe a sprinkle of chocolate chips and nuts.

Plate with a BE MINE Valentine made with LOVE. We highly recommend eating it while it is still warm. Add more whipped cream as needed.
